For my mom and I it is just another excuse to spend some more time together. We do not go all out or even plan anything. It sort of just happens. This year it was a very relaxed day. Mom was not feeling too well and I had to work in the evening. So I woke up went to the grocery store and made lunch. I ate mom sat and talked with me. It was nice and simple.
I made her a card and bought her a wonderful little plant.
This is the card I made. I sewed on the flowers... with much difficulty and pricked my fingers I don't know how many times, but I love how it turned out. Simple and something right from my own hands. On the inside is a personal note from me to my mother.
Then for lunch I made penne pasta with asparagus and tomatoes, a little goat cheese and Newman Own's Family Italian Dressing and salad. YUM.
I chopped up some veggies for the salads
Cooked the asparagus. Bring a pan of shallow water to a boil. Add the asparagus. Then lower the temp and simmer covered for about 5 minutes until the asparagus is bright green. I added a little salt to the water before I put the asparagus just to give it a little flavor.
So bright and yummy.
I used a leafy mixed green and spinach mix. Then tossed in the cucumber, avocado, tomato, some ground chia seeds, and pepito seeds. I add ground chia seeds to most of my salads and smoothies. They give me that extra omega-3 and fiber. The pepito seeds add a crunch to my salads and they are better than sunflower seeds.
It was a good lunch and a good chat with a wonderful person.
This is Dad capturing the moment. Mom and I were looking at what my shirt said... "I love you. To the moon and back." I bought this shirt as soon as I saw it specifically for this saying. I tell this to my mom all of the time so of course I just had to get it. It's a crop top from Brandy Melville. And it is super soft and very comfy.
Happy Mother's Day, Mom!
*My Thoughts*
The plants we are holding in the pictures are the one I gave her and then my dad also bought her one. I wanted to show you how beautiful they are. We are going to repot them and give them a bigger home.
If you are looking for a great movie to watch I suggest Charlie Countryman. I give it a two thumbs up. It is a drama and a pretty strange deep movie, but it is very good. Shia LeBeouf plays Charlie Countryman a troubled man who is trying to find himself. There is also a beautiful love story happening in the back ground. It is a little crazy. But Rupert Grint (Ron Weasley for all you Harry Potter fans out there, you will learn of my Harry Potter love over time) is in it.
